Indulgent ruffles of raspberry pink petals with a delicate perfume make Peony ‘Hillary’ a must have for late spring borders. This intersectional hybrid is a cross which marries the exotic looks of tree peonies with the herbaceous growth habit of herbaceous peonies, and is often called an Itoh Peony. This hardy perennial is one of the earliest of the hybrid peonies to bloom and forms a pleasing mound of glossy foliage. Height: 75cm (29″). Spread: 90cm (36″).
Culinary note: The petals can be added to salads, or cooked slightly and sweetened for a treat. Peony water was also once considered a delicacy and the blooms can be floated in punches. For more details about edible flowers click here.
